Chef Wilson’s Background
Sean Wilson is a seasoned chef hailing from the Outer Banks of North Carolina, where he started his career at the age of 14 working in some of the country's best fish houses. Sean left the beach and in his travels attended the renowned New England Culinary Institute. Over the last decade Sean sought out and worked in kitchens spanning New York, Boston, Seattle, Spain, Vermont, and Northern California, rubbing elbows with chefs Todd English, Jonathan Sundstrom, Matt Frothingham, and Louise Dumhal along the way.
Chef Wilson and Des Moines
Sean Moved to Des Moines in the fall of 2006 and has worked at Andrew Meek's Sage, and took over the kitchen at Azalea in winter of 2008. 2012 marked the birth of Proof, Sean's own brain child. His pork-centric mentality was heavily influenced by southeastern flavors and technique, and brings a playful and sensible approach to new American, comfort foods from around the country to Des Moines.

We can think of no Chef in Des Moines who better fits the bill: Sean leads by example, regularly using his teaching background to show our staff not just how but why we do things the way we do. Our staff-family is his first priority, our guest the second. It would mean the world, not just to him, but to all of Proof, if this would be the year he took the James Beard Best Chef in the Midwest award.
