Come celebrate Valentine’s Day in Des Moines with your Proof family! Chef Wilson and company will be offering a 3 course Prix Fixe for whoever you most want to spend the evening with.

Guests receive choice of individual appetizers, shared entree, and individual desserts.
$75 per guest, additional wine pairing $42

We will not be running our full menu the night of February 14th, but will still have cheese + charcuterie available in addition to the menu below.

Iberico Pork Loin ♠♦ | crusted with garlic & porcini, rosemary potatoes, clam and chorizo soffrito, braised garlicy white beans, kale, piquillo peppers

Roasted Curried Eggplant ♦ | apples, ginger, currant, almond, chickpea, lemon curry leaf rice, cucumber, grapefruit white balsamic caviar

20 oz Spanish Grilled Ribeye ♠♦ | finished with Scotch and Rioja red wine, roasted Spanish onion, rosemary potatoes, pickled onion, mojo rojo & verde, roasted mushroom, burnt onion soubise

Whole Roasted European Sea Bass ♠ | stuffed with La Quercia prosciutto, sundried tomato, olive, pine nut, oregano, roasted eggplant pahi, watercress & arugula salad

Strawberry-Chocolate Cremoso | citrus curd, orange ice box cake, chocolate tuile

Maple & Mascarpone Cheesecake | black walnut shortbread
