How often does the menu change?
Our aim is to rotate menus around various Mediterranean regions with each season, but if all the dishes we're putting together aren't a wow, we'll take the extra time to make sure everything is on the level our guests expect.

We're currently wrapping up Winter in Northern Italy and heading to Spain & Morocco for Spring/Summer.
What dietary restrictions do you accommodate?
While we try to accommodate as many restrictions as possible, we have a small team and can't always accommodate everyone. We like to keep several dishes available that are or can easily be modified to be Gluten Free, Vegetarian, Vegan, Nut or Dairy Free.
Some seasonal menus lend to this better than others, largely due to regional style and available produce, but we'll always do our best.
Can we bring our own wine?
You may! We charge a corkage fee of $15 per bottle and will still offer our usual wine service for your group. Our Sommelier notes that the fee often disappears pretty quickly if you bring a bottle and then buy a second.
Is there a dress code?
Absolutely not! Chef himself would come in wearing shorts and sandals. Proof describes itself as "polished casual" and while this is a restaurant that guests often dress up to attend, as long as the important parts are covered, we want you to be comfortable and won't turn you away for your appearance.
